- In one bowl, mix together the egg, milk, oil, sugar, bananas, and vanilla.
- In another bowl, mix together the flour, baking soda, and baking powder.
- Combine the wet and dry ingredients; mix until just blended.
- Scoop the batter into 12 nonstick or paper lined muffins cups; fill each cup full.
- Bake in a 200o C (400o F) oven for 20 to 25 minutes, or until firm to the touch.
