- Preheat oven to 180o C (350o F).
- Beat sugar, egg, egg white and vanilla.
- Combine flax flour, white flour, oats, salt, baking powder, and baking soda. Stir into wet ingredients.
- Scoop 15 ml (1 tbsp) of dough onto a nonstick baking sheet; repeat with the remaining dough.
- Bake for 10 minutes; cool 1 to 2 minutes on sheet, then remove to wire rack.
