Flax flour reduces the need for shortening or cooking oil in baked goods – simply use1 cup of flax flour to replace 1/3 cup of shortening or oil in a recipe.
- Substitute ground flax for eggs: stir 15 ml (1 Tbsp) of flax flour into 45 ml (3 Tbsp) of boiling water. Micro-wave until the water returns to the boil. This will help dissolve more of the soluble fibre in the flax. Set aside for 1 minute before using. Replaces one egg.

- When adding flax flour to baked goods, add liquid equal to the amount of flax flour being used, in addition to the amount of liquid called for in the recipe. For example, if a recipe uses 1 cup of water and you add ½ cup of flax flour with the dry ingredients, use 1 ½ cup of water, to maintain the consistency of the batter.
- Allow batter to which flax flour has been added, to sit for 4 to 5 minutes before portioning into baking pans or muffin cups.
- Flax flour can be substituted for up to 15% of the wheat flour in a recipe. For example, in a recipe calling for 6 cups of wheat flour, replace 1 cup of the wheat flour with 1 cup of flax flour.
- Flax flour contains gums, as soluble fibre, with properties which resemble those of gum Arabic, a widely used stabilizer. The gum in flax has been shown to improve loaf volume, oven spring and keeping quality, as well as flavour, appearance, and nutritional value.
