Raspberry Cookies

These raspberry cookies are all that your family will rave about! Not only are they perfect for any season, but they have the right amount of tartness and the right amount of sweet for anyone!

  • 2 cups frozen raspberries
  • 1 ½ cups unsalted butter
  • ¾ cup icing sugar
  • ½ cup brown sugar
  • 1 lemon zest
  • 1 egg
  • 2 cups Valley Kitchen Bread Mix
  • ½ Tbsp baking powder
  • 1 tsp salt
  • 1 cup white chocolate chips


  1. Preheat the oven to 375 degrees.
  2. Mix in your butter with your brown and icing sugar until dough is light and fluffy.
  3. Add in your egg and zest. Once it's fully mixed in, add in your Valley Bread Mix, baking powder and salt until everything is well incorporated in the dough.
  4. Finally add in your frozen raspberries and your white chocolate.
  5. Cover and let sit for 10 minutes.
  6. Then rolled dough into small balls, and put in a parchment lined baking sheet.
  7. Insert in the oven for 16 minutes. Once it's done, let sit for another 5 and enjoy with your whole family!
