  1. Melt butter and warm the oil in a heavy pan over medium-high heat
  2. Add diced onions and sauté for a few minutes until starts to color. Add a pinch of salt and nutmeg. Add diced prosciutto and sauté for 30 second more
  3. Add flour and stir consistently until it starts to brown. When flour changes color add milk little by little incorporating it into the dough. Should take around 15-20 minutes.
  4. Let dough rest till room temperature and then butter the insides of a bowl and insert dough and cover with plastic wrap for at least 4 hours, but preferably overnight.
  5. To make the ham croquet shape them into logs and then pass them through the breading process of flour, egg, and bread crumbs.
  6. Fry them in hot oil and turn them so they are evenly brown. It should take around 45 seconds each side. Let sit and enjoy!

1. If you can try to leave them in the fridge for at least overnight, but 4 hours also works when you are in a hurry.

2. When frying make sure to open all your windows because after awhile, even with the fan on it gets very smoky.
