Sweet n' Sour Chicken

  • 1 pound chicken thighs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp apple shoulder powder
  • 1 tsp salt
  • 1 tsp ground pepper
  • ¼ cup canola oil
  • ½ cup Valley Kitchen Buckwheat Flour
  • 2 eggs beaten
  • ½ cup breadcrumbs

sauce

  • ¾ cup sugar
  • ½ cup apple cider vinegar
  • ¼ cup ketchup
  • 1 Tbsp soy sauce
  • ½ tsp garlic powder

Instructions

  1. Preheat oven to 325 degrees F. Put parchment paper over a 9×13 baking dish.
  2. To make the sauce, whisk together sugar, vinegar, ketchup, soy sauce and garlic powder in a large bowl; set aside.
  3. Season your chicken with salt, pepper, garlic powder, onion powder, apple shoulder powder, and paprika. Cut up thighs in strips or 1in cubes.
  4. In a large bowl, add your cut and seasoned chicken. Stir in buckwheat flour and gently toss to combine. Working one at a time, dip the chicken into the eggs, and then dip in breadcrumbs.
  5. Heat canola oil in a large saucepan. Add chicken and cook until golden brown, about 1-2 minutes. Transfer to a paper towel-lined plate; discard excess oil.
  6. Add chicken to prepared baking dish. Top with sweet and sour sauce. Place into oven and bake until the sauce has thickened, about 55 minutes, turning over every 15 minutes to evenly coat the chicken.
  7. Enjoy with the whole family!
