
Double Chocolate Chip Cookies

Yield: 18 cookies
Ingredients:
- 2 Tbsp butter, room temperature
- 1/2 cup brown sugar
- 1 egg, large
- 1 tsp vanilla
- 1/2 cup water, very warm
- 1/4 cup sifted cocoa powder
- 1 1/2 cups Valley Kitchen Pancake Mix
- 1/2 cup chocolate chips
Instructions:
- Preheat oven to 350 degrees Fahrenheit.
- Line 2 baking sheets with parchment paper.
- Cream the butter and brown sugar together.
- Beat in the egg and vanilla.
- Mix the cocoa powder with Valley Kitchen Pancake Mix.
- Beat the dry mixture into the creamed mixture alternately with water, for a couple of minutes until well blended. Stir in the chocolate chips.
- Scoop the dough, about Tbsp each, onto the lined baking sheet.
- Bake for 12 to 14 minutes.
- Cool on the pan for several minutes and then move to a rack to cool completely.
