Double Chocolate Chip Cookies

Yield: 18 cookies

Ingredients: 

  • 2 Tbsp butter, room temperature
  • 1/2 cup brown sugar
  • 1 egg, large
  • 1 tsp vanilla
  • 1/2 cup water, very warm
  • 1/4 cup sifted cocoa powder
  • 1 1/2 cups Valley Kitchen Pancake Mix
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit. 
  2. Line 2 baking sheets with parchment paper. 
  3. Cream the butter and brown sugar together. 
  4. Beat in the egg and vanilla. 
  5. Mix the cocoa powder with Valley Kitchen Pancake Mix. 
  6. Beat the dry mixture into the creamed mixture alternately with water, for a couple of minutes until well blended. Stir in the chocolate chips. 
  7. Scoop the dough, about Tbsp each, onto the lined baking sheet. 
  8. Bake for 12 to 14 minutes. 
  9. Cool on the pan for several minutes and then move to a rack to cool completely.
