Soft, delicious, and packed with the goodness of flax, they're sure to disappear almost as quickly as they come out of the oven.
Trust us—you'll want to make a double batch because these cookies won't last long!
Ingredients (makes 20 cookies):
1 cup Valley Kitchen Flax Flour
1 cup wheat flour
1 tsp baking powder
1/2 cup brown sugar
1/2 cup white sugar
1/4 cup butter, melted
2 large eggs
1 tsp vanilla
1 cup peanut butter
Method:
*Preheat your oven to 350°F.
*Mix the flax flour, wheat flour, and baking powder.
*In a separate bowl, beat together the brown sugar, white sugar, melted butter, eggs, and vanilla until smooth.
*Blend in the peanut butter.
*Using a stiff spatula or heavy spoon, stir the dry ingredients into the wet ingredients until a thick dough forms.
*Scoop 3 Tbsp of dough per cookie onto a parchment-lined baking sheet, leaving space between cookies (about 10 cookies per sheet).
*Flatten each cookie with a fork (classic criss-cross, if you like!).
*Bake for 13–15 minutes.
*Cool on the pan for 5 minutes, then transfer to a wire rack to finish cooling.
Serving suggestions:
Enjoy warm with a glass of milk (or milk substitute).
For extra crunch, sprinkle the tops with a pinch of sugar before baking.

Substitution:
To make these nut-free, school friendly cookies, replace the peanut butter with soy or sunflower seed butter. Reduce the flax flour and wheat flour by ¼ cup each.
